Because the USDA does not classify rabbits as poultry, they default to FDA/SCDA wholesale food rules. In SC, this means small farms are forced to use commercial, restaurant-grade kitchens for processing—a massive financial barrier. Previously, rabbits were treated similarly to poultry, allowing for safe, small-scale farm processing. We need a state law to reclassify rabbit processing to align with poultry exemptions. This would let homesteaders sell safely at farmers markets and support local food security without the "industrial" overhead.
